spicy chicken thigh kebabs w/bacon paste

I've always been intimidated by outdoor cooking but I've had the desire to try it. This is my 1st attempt at grilling outdoors and it was a huge success! This chicken is slightly spicy, not hot. You've heard of wrapping chicken in bacon, well give bacon paste a try. If you love bacon, you will love this! I wasn't sure if we were eating Chicken or Pork! Be prepared, this is hands on work! It gets messy. Create your own favorite BBQ sauce and add the seasoning you love the best to the bacon paste. The bacon paste is adapted from a recipe in Cooks Illustrated. Absolutely genius idea!

Ingredients

  • 2 to 3 pounds boneless skinless chicken thighs
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1 cup bbq sauce (your favorite) i used sweet baby rays original
  • 3 tablespoons bourbon
  • 1 tablespoon apple cider vinegar
  • 1/2 to 1 teaspoons ground jalapeno, dried (if not available, use fresh jalapeno and mince, i would use 1 large seeded jalapeno in this case)
  • 5 slices hickory smoked bacon, cut into pieces (this was fairly thick bacon)
  • 2 tablespoons paprika, sweet mild (can use a hot paprika if desired)
  • 1 tablespoon smoked paprika
  • 1/2 teaspoon chili powder (can use hot if desired)
  • 2 tablespoons brown sugar
  • 1 teaspoon garlic, minced
  • 1 tablespoon olive oil, extra virgin
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

How To Make spicy chicken thigh kebabs w/bacon paste

  • Step 1
    Clean thighs, removing any fat. Cut into 1-inch pieces; sprinkle with salt and cayenne pepper and refrigerate until ready to use.
  • Step 2
    Combine bbq sauce, bourbon, apple cider vingar and ground jalapeno; whisk together and set aside.
  • Step 3
    Add bacon, paprika, chili powder, brown sugar, garlic, olive oil, salt and pepper to bowl of blender. Pulse until you get a fairly smooth paste.
  • Step 4
    Pat chicken pieces dry with paper towels. Using hands rub bacon paste on to pieces. Divide chicken pieces and place on 4 skewers.
  • Step 5
    Place on preheated grill and grill to desired doneness (at least 110 degrees). Brush bbq sauce over chicken and grill for about 1 minute longer, brushing on more sauce if desired.
