spicy chicken & rice

My sister in law made this the summer before my husband and I got married. She never made it again but I fell in love with the recipe and over the years it has become a family favorite. I make it just about every time family gets together. I even got on a local news cooking segment with it many years ago. Easy, fast, and mmm good.

Ingredients

  • 2 - pounds chicken
  • 1 - can cheddar cheese soup
  • 1 - can rotel tomatoes
  • 1 - can snap e tom or spicy v8
  • 2 1/4 - cups minute rice
  • 1 - stick butter

How To Make spicy chicken & rice

  • Step 1
    Make sure you boil your chicken first or you can used can chicken. I like to use canned as it is quicker.
  • Step 2
    Saute Minute Rice in 1 stick butter. Add cheddar cheese soup, Rotel tomatoes, Snap E Tom or Spicy V8. Cook on stovetop 20-25 minutes until rice is tender. Add chicken to skillet last, stir to heat thoroughly together. May need to add a bit of water while heating if it starts to thicken too much.
  • Step 3
    When serving top with shredded cheese and picante sauce. Enjoy.
