spicy chicken pasta

My husband would eat macc & cheese every day if I would make it. So to compromise, I just make one pot meals based around macc & cheese with different flavors. This one I season the chicken like I would taco meat & add the tomatoes & chiles. Makes him happy!

Ingredients

  • 1 pound boneless chicken(white or dark)
  • 1 box ready cut pasta noodles(maccaroni))
  • 8 ounces velveeta, cubed
  • 1 can tomatoes & chiles, your choice of heat level
  • 1/2 teaspoon cumin
  • 1-2 teaspoon chili powder, to taste
  • 1-2 teaspoon garlic salt, to taste
  • 1/2 teaspoon white pepper & black pepper
  • - olive oil, extra virgin

How To Make spicy chicken pasta

  • Step 1
    Cut chicken into bite size cubes. Add seasonings & oil to chicken & mix well to coat.
  • Step 2
    Put on pasta to cook according to package.
  • Step 3
    Saute chicken in a large skillet until no longer pink. Drain.
  • Step 4
    Put velveeta & tomatoes in a bowl, & microwave until cheese is melted. Stir well to combine.
  • Step 5
    Cobine chicken, pasta & cheese sauce. Allow to sit covered for approx. 10 minues for cheese to stick to pasta.
  • Step 6
    We like to add a dollop of sour cream on top & green onions if I have them.
