  • 1 1/2 lb
    chicken thigh meat, cut from bones
  • 1/4 c
    diced onion, diced
  • 1/4 c
    green bell pepper, diced
  • 2 medium
    tomatoes, diced
  • 1 clove
  • 1/4 tsp
  • 2 Tbsp
  • 1 Tbsp
  • 1 can(s)
    chicken broth
  • 12
    flour tortillas, (6 inch size)
  • ·
    shredded lettuce (optional)
  • ·
    shredded mexican blend cheese (optional)
  • 1/2 tsp
    chili powder

How to Make Soft Chicken Tacos


  1. Cut chicken from bone and shred.
  2. Heat oil in a skillet. Add chicken, onion, bell pepper, chili powder and garlic. Cook until chicken is done and veggies are tender.
  3. Add flour and stir to blend. Add chicken broth, tomato and pepper. Stir.
  4. Cover and simmer for 45 minutes. Strain to serve.
  5. Serve in 6 inch flour tortillas. Top with shredded lettuce and shredded Mexican blend cheese.
