Don't be afraid of the extra step of the rub and sauce. Altogether, It shouldn't take you more than 40 minutes....except for getting your grill to medium high. But you can do other recipe steps while your grill is heating up. I grew up eating white barbecue sauce with chicken....I prefer it with chicken in fact! Feel free to sub mushrooms or zucchini for the cherry tomatoes or red onions....I generally use the veggies I have on hand. Also, feel free to sub chicken breasts....they just won't be as moist and juicy.

Ingredients

  • KABOBS
  • 2 pounds chicken thighs, skinned and boneless
  • 1/2 large red onion, quartered and separated into pieces
  • 1 pint cherry tomatoes
  • - metal skewers
  • SMOKEY BARBECUE RUB
  • 2 tablespoons brown sugar, firmly packed
  • 2 teaspoons garlic salt
  • 1 teaspoon dried chipotle powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon dried oregano
  • WHITE BARBECUE SAUCE
  • 1 1/2 cups mayonnaise
  • 1/3 cup white vinegar
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 clove garlic, pressed

How To Make smoky chicken barbecue kabobs

  • Step 1
    Kabobs: Preheat the grill to 350° to 400°F (medium-high) heat. Cut the chicken into 1 inch cubes. Thread the chicken, onion, and tomatoes alternately onto skewers, leaving 1/4 inch space between the pieces. Sprinkle the kabobs with Smoky Barbecue Rub.
  • Step 2
    Grill the kabobs, covered with grill lid, 4 to 5 minutes on each side. Serve with white barbecue sauce.
  • Step 3
    Smoky Barbecue Rub: Combine all ingredients and stir well.
  • Step 4
    White Barbecue Sauce: Combine all ingredients in a jar. Shake well to mix.
