slow cooker chicken fajitas

I got this recipe from Six Sisters stuff. It was adapted from Elyses Baked Chicken Fajitas. These are fairly easy to prepare, and once you put them in the crockpot, you're basically done.

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 1 can (15 oz.) diced tomatoes
  • 1 can (4 oz.) diced green chilies
  • 1 medium onion, sliced
  • 1 large bell pepper, seeded and sliced
  • 2 tablespoons vegetable oil
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 12 - flour tortillas, warmed to serve

How To Make slow cooker chicken fajitas

  • Step 1
    Spray slow cooker with non-stick cooking spray. Place all ingredients in slow cooker and mix gently , until all spices are incorporated. Cook on LOW 4-6 hours OR on HIGH for 2 hours. Serve with tortillas, shredded cheese, pico de gallo and guacamole.
  • Step 2
    NOTE* I drained my can of diced tomatoes... (the first time I made these,) there was juice that I didn't need. Also, you can use fresh garlic if you like. If you do not have all the condiments at the end, they will still be good. I also did'nt need to cook recipe as long as stated. You don't want chicken to be over cooked; so check it occasionally, if you can.
