  • 4
    whole chicken breasts
  • 3/4 tsp
    salt
  • 1/8 tsp
    pepper
  • 2 Tbsp
    lemon juice
  • 3 Tbsp
    melted butter
  • 1/2 c
    dry sherry
  • SAUCE INGREDIENTS

  • 4 Tbsp
    butter
  • 4 Tbsp
    flour
  • 1 1/2 c
    light cream or milk
  • 3/4 c
    liquid from pan
  • 1 tsp
    paprika
  • 3 Tbsp
    grated parmesan cheese

How to Make Sherried Chicken Breast

Step-by-Step

  1. Place chicken breast in 13" by 9" pan
  2. Sprinkle chicken with salt, pepper and lemon juice.
  3. Pour melted butter over each chicken breast.
  4. Pour sherry over the chicken.
  5. Cover pan with foil and bake for 30 minutes at 400 degrees.
  6. DO NOT OVERBAKE!
  7. Pour off liquid in baking pan and save to make the sauce. Keep the chicken warm while you make the Sauce. See Heading above for Sauce Ingredients!
  8. Directions for making the Sauce
  9. Cook butter and flour together for 2 to 3 minutes.
  10. Stir in liquid and cream (or milk)
  11. Cook over medium heat until smooth and thick
  12. Spread sauce over the chicken
  13. Sprinkle with cheese and paprika
  14. Bake in oven until surface is golden brown, about 5 minutes.
