Ingredients
- 4 - whole chicken breasts
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons lemon juice
- 3 tablespoons melted butter
- 1/2 cup dry sherry
- SAUCE INGREDIENTS
- 4 tablespoons butter
- 4 tablespoons flour
- 1 1/2 cups light cream or milk
- 3/4 cup liquid from pan
- 1 teaspoon paprika
- 3 tablespoons grated parmesan cheese
How To Make sherried chicken breast

Step 1Place chicken breast in 13" by 9" pan

Step 2Sprinkle chicken with salt, pepper and lemon juice.

Step 3Pour melted butter over each chicken breast.

Step 4Pour sherry over the chicken.

Step 5Cover pan with foil and bake for 30 minutes at 400 degrees.

Step 6DO NOT OVERBAKE!

Step 7Pour off liquid in baking pan and save to make the sauce. Keep the chicken warm while you make the Sauce. See Heading above for Sauce Ingredients!

Step 8Directions for making the Sauce

Step 9Cook butter and flour together for 2 to 3 minutes.

Step 10Stir in liquid and cream (or milk)

Step 11Cook over medium heat until smooth and thick

Step 12Spread sauce over the chicken

Step 13Sprinkle with cheese and paprika

Step 14Bake in oven until surface is golden brown, about 5 minutes.
