We love Italian food and I love casseroles. They are so easy to put together and can be prepared in so many different ways. Hope you enjoy this as much as we do.

1 c
chopped chicken or other meat
8 oz
whole wheat rotoni or other pasta
1 c
alfredo sauce, pre-made
1 c
tomatoes, canned and chopped, and drained
1/4 c
onion, finely chopped
1 Tbsp
olive oil, extra virgin
1/4 c
grated cheese (s) of your choice


1Preheat oven to 325 degrees F
2In a pot of water, add olive oil and bring to a rapid boil. Add pasta and cook to desired doneness. Drain well.
3In a large oven safe casserole dish add meat, pasta and remaining ingredients. Stir until well combined.
4Bake @ 325 degrees F for 30 minutes or until hot. Remove from oven and sprinkle the top with cheese (s) of your choice. (I use a combination of Italian cheeses)
5Bake again only until cheese has melted.
