We love Italian food and I love casseroles. They are so easy to put together and can be prepared in so many different ways. Hope you enjoy this as much as we do. Happy cooking.

Ingredients

  • 1 cup chopped chicken or other meat
  • 8 ounces whole wheat rotoni or other pasta
  • 1 cup alfredo sauce, pre-made
  • 1 cup tomatoes, canned and chopped, and drained
  • 1/4 cup onion, finely chopped
  • 1 tablespoon olive oil, extra virgin
  • 1/4 cup grated cheese (s) of your choice

How To Make rotoni pasta alfredo

  • Step 1
    Preheat oven to 325 degrees F
  • Step 2
    In a pot of water, add olive oil and bring to a rapid boil. Add pasta and cook to desired doneness. Drain well.
  • Step 3
    In a large oven safe casserole dish add meat, pasta and remaining ingredients. Stir until well combined.
  • Step 4
    Bake @ 325 degrees F for 30 minutes or until hot. Remove from oven and sprinkle the top with cheese (s) of your choice. (I use a combination of Italian cheeses)
  • Step 5
    Bake again only until cheese has melted.
