The recipe uses mostly canned, pre-made or left-over ingredients, so it's easy and quick to make. So I particularly like it on those days when I'm really hungry but have so little time to cook a full meal.

Ingredients

  • 1 - 10-inch tortilla (i prefer flour tortillas, but any will work)
  • 1/2 cup cooked chicken breast, cut into bite-size pieces
  • 1-2 tablespoon low-fat sour cream
  • 2 tablespoons salsa (mild or hot - your choice)
  • 1 1/ ounces mexican-blend cheese, grated
  • 1 tablespoon cilantro, coarsely chopped
  • 1 tablespoon green onion, chopped
  • 1 - avocado slice (optional)

How To Make quick chicken fajita wrap

  • Step 1
    Warm the tortilla in a skillet (or in a warm oven), if you prefer.
  • Step 2
    Place chicken, sour cream, salsa and cheese on tortilla. Add avocado slice, if using. Sprinkle cilantro and sliced green onion on top.
  • Step 3
    Roll up the tortilla, and serve. I usually make a single wrap, for a light lunch for myself. But you cut the wrap into 4 or more pieces, and it would make a nice appetizer for a Mexican-themed party.
