Quick Chicken Fajita Wrap
110-inch tortilla (i prefer flour tortillas, but any will work)
1/2 ccooked chicken breast, cut into bite-size pieces
1-2 Tbsplow-fat sour cream
2 Tbspsalsa (mild or hot - your choice)
1 1/ ozmexican-blend cheese, grated
1 Tbspcilantro, coarsely chopped
1 Tbspgreen onion, chopped
1avocado slice (optional)
How to Make Quick Chicken Fajita Wrap
- Warm the tortilla in a skillet (or in a warm oven), if you prefer.
- Place chicken, sour cream, salsa and cheese on tortilla. Add avocado slice, if using. Sprinkle cilantro and sliced green onion on top.
- Roll up the tortilla, and serve.
I usually make a single wrap, for a light lunch for myself. But you cut the wrap into 4 or more pieces, and it would make a nice appetizer for a Mexican-themed party.
