The recipe uses mostly canned, pre-made or left-over ingredients, so it's easy and quick to make. So I particularly like it on those days when I'm really hungry but have so little time to cook a full meal.

Ingredients

10-inch tortilla (i prefer flour tortillas, but any will work)
1/2 c
cooked chicken breast, cut into bite-size pieces
1-2 Tbsp
low-fat sour cream
2 Tbsp
salsa (mild or hot - your choice)
1 1/ oz
mexican-blend cheese, grated
1 Tbsp
cilantro, coarsely chopped
1 Tbsp
green onion, chopped
1
avocado slice (optional)

How to Make Quick Chicken Fajita Wrap

Step-by-Step

  • 1Warm the tortilla in a skillet (or in a warm oven), if you prefer.
  • 2Place chicken, sour cream, salsa and cheese on tortilla. Add avocado slice, if using. Sprinkle cilantro and sliced green onion on top.
  • 3Roll up the tortilla, and serve.

    I usually make a single wrap, for a light lunch for myself. But you cut the wrap into 4 or more pieces, and it would make a nice appetizer for a Mexican-themed party.
