Quick Chicken Fajita Wrap
10-inch tortilla (i prefer flour tortillas, but any will work)
cooked chicken breast, cut into bite-size pieces
low-fat sour cream
salsa (mild or hot - your choice)
mexican-blend cheese, grated
cilantro, coarsely chopped
green onion, chopped
avocado slice (optional)
How to Make Quick Chicken Fajita Wrap
1Warm the tortilla in a skillet (or in a warm oven), if you prefer.
2Place chicken, sour cream, salsa and cheese on tortilla. Add avocado slice, if using. Sprinkle cilantro and sliced green onion on top.
3Roll up the tortilla, and serve.
I usually make a single wrap, for a light lunch for myself. But you cut the wrap into 4 or more pieces, and it would make a nice appetizer for a Mexican-themed party.
