Bet you didn't think I could speak Italian, hey?? It's the good old chicken cacciatore, but I was trying to make it real Italian. Enjoy--we do!

    olive oil
  • 1 tsp
  • 1/8 tsp
  • 1
    chicken, cut into pieces
  • 1 clove
  • 2
    medium onions, chopped
  • 12
    mushrooms, sliced
  • 1
    green pepper, cut into large cubes
  • 1 can(s)
    8-oz tomato sauce
  • 1 c
    dry white or red wine
  • 1 c
    hot chicken broth
  • 1 tsp
  • 1 tsp
  • 1
    bay leaf

How to Make Polo ala Cacciatore


  1. Heat oil in a large saucepan. Sprinkle salt and pepper over chicken. Brown on both sides in oil.
  2. Remove chicken from frying pan. Add garlic and onions and saute until golden.
  3. Place mushrooms and green pepper in a large baking dish. Arrange chicken on top of mushrooms and green pepper.
  4. Combine tomato sauce, wine, broth and herbs. Pour over chicken. Bake at 350 degrees for one hour.
