Bet you didn't think I could speak Italian, hey?? It's the good old chicken cacciatore, but I was trying to make it real Italian. Enjoy--we do!

Ingredients
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 - chicken, cut into pieces
- 1 clove garlic
- 2 - medium onions, chopped
- 12 - mushrooms, sliced
- 1 - green pepper, cut into large cubes
- 1 can 8-oz tomato sauce
- 1 cup dry white or red wine
- 1 cup hot chicken broth
- 1 teaspoon basil
- 1 teaspoon oregano
- 1 - bay leaf
How To Make polo ala cacciatore

Step 1Heat oil in a large saucepan. Sprinkle salt and pepper over chicken. Brown on both sides in oil.

Step 2Remove chicken from frying pan. Add garlic and onions and saute until golden.

Step 3Place mushrooms and green pepper in a large baking dish. Arrange chicken on top of mushrooms and green pepper.

Step 4Combine tomato sauce, wine, broth and herbs. Pour over chicken. Bake at 350 degrees for one hour.
