Pollo Rancho Luna (Moon Ranch Chicken)
6 Tbspolive oil divided
8 clovegarlic minced
2 mediumonions chopped
1/2 cfresh squeezed orange juice
1/2 cfresh squeezed lemon juice
1/2 cdry white wine
6boneless chicken thighs
·salt and pepper to taste
How to Make Pollo Rancho Luna (Moon Ranch Chicken)
- Preheat oven 350 degrees
- Heat 3 tbsp of the oil in skillet. Add the garlic and saute 1 minute. Set aside.
- In a bowl combine the remaining oil, onion, juices, and wine. Add the garlic mixture to this and mix well.
- Place chicken in baking dish and pour the juice mixture over top
- Bake for about 35 minutes or until the chicken in done. Serve over rice.
