Ingredients For pollo rancho luna (moon ranch chicken)

  • 6 Tbsp
    olive oil divided
  • 8 clove
    garlic minced
  • 2 md
    onions chopped
  • 1/2 c
    fresh squeezed orange juice
  • 1/2 c
    fresh squeezed lemon juice
  • 1/2 c
    dry white wine
  • 6
    boneless chicken thighs
  • salt and pepper to taste

How To Make pollo rancho luna (moon ranch chicken)

    Preheat oven 350 degrees
  • 2
    Heat 3 tbsp of the oil in skillet. Add the garlic and saute 1 minute. Set aside.

    In a bowl combine the remaining oil, onion, juices, and wine. Add the garlic mixture to this and mix well.

    Place chicken in baking dish and pour the juice mixture over top

    Bake for about 35 minutes or until the chicken in done. Serve over rice.
