You can use white mushrooms if you prefer. You can use either homemade or jarred pesto sauce.

Ingredients

  • 2
    chicken breasts, boneless and skinless
  • 16 oz
    penne pasta, uncooked
  • 1 c
    chopped fresh spinach
  • 8 oz
    fresh crimini mushrooms, sliced
  • 2 medium
    roma tomatoes, diced
  • 1 c
    basil pesto sauce
  • 1 c
    feta cheese crumbles
  • 3 slice
    bacon, cooked crisp and crumbled
  • 2 Tbsp
    olive oil, divided

How to Make Pesto Chicken Penne

Step-by-Step

  1. Heat 1 Tbsp. oil in skillet. Add spinach, tomatoes and mushrooms. Saute stirring frequently for 5 minutes. Set aside.
  2. Cut chicken into strips.
  3. Heat another Tbsp oil in skillet. Add chicken strips and cook until chicken is done.
  4. Add pesto to chicken and saute another 3 minutes. Set aside.
  5. Cook penne according to package directions. Drain.
  6. Place chicken and vegetables in a bowl. Add pesto and toss to coat, mixing chicken and veggies as you do so.
  7. Sprinkle with feta cheese and bacon crumbles.
