Ingredients
- 2 - chicken breasts, boneless and skinless
- 16 ounces penne pasta, uncooked
- 1 cup chopped fresh spinach
- 8 ounces fresh crimini mushrooms, sliced
- 2 medium roma tomatoes, diced
- 1 cup basil pesto sauce
- 1 cup feta cheese crumbles
- 3 slices bacon, cooked crisp and crumbled
- 2 tablespoons olive oil, divided
How To Make pesto chicken penne

Step 1Heat 1 Tbsp. oil in skillet. Add spinach, tomatoes and mushrooms. Saute stirring frequently for 5 minutes. Set aside.

Step 2Cut chicken into strips.

Step 3Heat another Tbsp oil in skillet. Add chicken strips and cook until chicken is done.

Step 4Add pesto to chicken and saute another 3 minutes. Set aside.

Step 5Cook penne according to package directions. Drain.

Step 6Place chicken and vegetables in a bowl. Add pesto and toss to coat, mixing chicken and veggies as you do so.

Step 7Sprinkle with feta cheese and bacon crumbles.
