(thinly sliced) boneless, skinless, chicken breast
1/2 c
all purpose flour
1/2 tsp
salt and pepper (to taste)
2 Tbsp
olive oil, extra virgin
1 can(s)
(15 oz) sliced peaches, drained, juice reserved
2 Tbsp
light brown sugar
2 Tbsp
cooking sherry
1 tsp
dried basil
1/4 tsp
ground allspice

How to Make Peachy Chicken

Step-by-Step

  • 1Pat dry each piece of chicken
    In a bowl, or on a large plate, combine flour, salt and pepper. Coat each chicken piece in the flour mixture: set aside.
  • 2Pour olive oil into a large skillet and heat over medium high heat.
    Place chicken pieces into skillet and cook rapidly until browned on both sides.
  • 3Place browned chicken pieces into an 11 x7 x2 inch baking dish.
    Arrange peach slices around the chicken; set aside.
  • 4Add water to peach juice to make 1 cup liquid; pour into a small mixing bowl.
    Stir in brown sugar, sherry, basil, and allspice.
    Pour over the chicken pieces; cover with foil.
  • 5Bake in a preheated 350 F oven for 45 minutes or until internal temperature of chicken is 165 F.
  • 6Serve chicken with peaches and juice.
