Ingredients

  • 14 ounces fettucine or linguine
  • 4 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon salted capers, rinsed
  • 1 tablespoon wholegrain mustard
  • 1/2 medium red onion, finely sliced
  • 2 - smoked chicken breasts, sliced
  • 2 tablespoons dill, fresh chopped
  • 2 tablespoons italian parsley chopped

How To Make pasta with smoked chicken breast and dill sauce

  • Step 1
    Place the pasta in a large saucepan of boiling salted water over high heat and cook for 5 minutes or until al dente.
  • Step 2
    While the pasta is cooking, place the oil, lemon juice, capers, mustard and onion in a small saucepan over low-medium heat and cook for 2 minutes or until heated through.
  • Step 3
    Drain the pasta and place on a large serving plate. Toss through the oil and lemon mixture, chicken, dill and parsley. Serve with lots of cracked black pepper and a soalad of baby English spinach.
