Not many ingredients for such a great taste. For my WW Friends: 6 SP (when divided into 6 portions)

Ingredients

  • 8 - corn tortillas (6 inches)
  • 1 jar salsa (12 oz)
  • 1 can kidney beans (15 oz), drained and rinsed
  • 1 cup chicken, cooked and shredded
  • 1 cup monterey jack cheese with jalapeno peppers, shredded

How To Make mile high enchilada pie

  • Step 1
    Place 1 tortilla on bottom of slow cooker. Top with small amount of salsa (1-2 tablespoons), beans, chicken and cheese. Continue layering using remaining ingredients.
  • Step 2
    Cover; cook on low 6-8 hours or high 3-4 hours.
