This started out as a ground beef recipe but we like it with chicken better.This will make the same amount of servings as a box of (Hamburger Helper).I hope you like it.

Ingredients

  • 2 pounds 3 chicken breast fillets
  • 1 can tomato sauce
  • 1 cup medium picante sauce
  • 1 can pinto beans rinsed and drained
  • 1 cup minuet rice (don't add water)
  • 1/2 cup sharp cheddar cheese

How To Make mexican chicken

  • Step 1
    In a large skillet (I use a 9')with lid.
  • Step 2
    Put all ingredients except the cheese in skillet and cover.
  • Step 3
    Start cooking on med/high for 25 minuets. Stir occasionally.
  • Step 4
    Reduce heat to med/low, add Minuet rice and cover for 5 minuets.
  • Step 5
    Top with cheese and serve with tortilla chips.
