This started out as a ground beef recipe but we like it with chicken better.This will make the same amount of servings as a box of (Hamburger Helper).I hope you like it.

Ingredients

  • 2 lb
    3 chicken breast fillets
  • 1 can(s)
    tomato sauce
  • 1 c
    medium picante sauce
  • 1 can(s)
    pinto beans rinsed and drained
  • 1 c
    minuet rice (don't add water)
  • 1/2 c
    sharp cheddar cheese

How to Make Mexican Chicken

Step-by-Step

  1. In a large skillet (I use a 9')with lid.
  2. Put all ingredients except the cheese in skillet and cover.
  3. Start cooking on med/high for 25 minuets.
    Stir occasionally.
  4. Reduce heat to med/low, add Minuet rice and cover for 5 minuets.
  5. Top with cheese and serve with tortilla chips.
