Ingredients

  • 1/4 c
    hummus, your choice (i prefer some with garlic and some heat!)
  • 1/4 c
    feta cheese, crumbled
  • 3 Tbsp
    tomatoes, diced
  • 2 Tbsp
    kalamata olives, diced
  • 4
    chicken breast halves, 6 oz each, skinless and boneless
  • 1/4 tsp
    salt
  • 1/4 tsp
    black pepper
  • 1 Tbsp
    olive oil

How to Make Mediterranean Chicken

Step-by-Step

  1. Preheat oven to 350°.
  2. Combine hummus, feta cheese, diced tomato, and chopped kalamata olives. If your hummus does not have garlic added, add 1 clove minced garlic to your mix.
  3. Cut a 1-inch-wide slit into the thick end of chicken breast halves, and carefully cut down to center of chicken to form a pocket. Divide cheese mixture evenly among pockets. Secure with wooden picks. Sprinkle chicken with salt and pepper.
  4. Heat a large ovenproof skillet over medium-high heat. Add olive oil to pan. Add chicken to pan; sauté for 4 minutes. Turn chicken over.
  5. Bake at 350° for 12 minutes; let stand for 5 minutes.
