Ingredients
- 1/4 cup hummus, your choice (i prefer some with garlic and some heat!)
- 1/4 cup feta cheese, crumbled
- 3 tablespoons tomatoes, diced
- 2 tablespoons kalamata olives, diced
- 4 - chicken breast halves, 6 oz each, skinless and boneless
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
How To Make mediterranean chicken

Step 1Preheat oven to 350°.

Step 2Combine hummus, feta cheese, diced tomato, and chopped kalamata olives. If your hummus does not have garlic added, add 1 clove minced garlic to your mix.

Step 3Cut a 1-inch-wide slit into the thick end of chicken breast halves, and carefully cut down to center of chicken to form a pocket. Divide cheese mixture evenly among pockets. Secure with wooden picks. Sprinkle chicken with salt and pepper.

Step 4Heat a large ovenproof skillet over medium-high heat. Add olive oil to pan. Add chicken to pan; sauté for 4 minutes. Turn chicken over.

Step 5Bake at 350° for 12 minutes; let stand for 5 minutes.
