Ingredients

  • 1/4 cup hummus, your choice (i prefer some with garlic and some heat!)
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons tomatoes, diced
  • 2 tablespoons kalamata olives, diced
  • 4 - chicken breast halves, 6 oz each, skinless and boneless
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

How To Make mediterranean chicken

  • Step 1
    Preheat oven to 350°.
  • Step 2
    Combine hummus, feta cheese, diced tomato, and chopped kalamata olives. If your hummus does not have garlic added, add 1 clove minced garlic to your mix.
  • Step 3
    Cut a 1-inch-wide slit into the thick end of chicken breast halves, and carefully cut down to center of chicken to form a pocket. Divide cheese mixture evenly among pockets. Secure with wooden picks. Sprinkle chicken with salt and pepper.
  • Step 4
    Heat a large ovenproof skillet over medium-high heat. Add olive oil to pan. Add chicken to pan; sauté for 4 minutes. Turn chicken over.
  • Step 5
    Bake at 350° for 12 minutes; let stand for 5 minutes.
