I originally got the recipe from yummly.com but there were so many ingredients I didn't like or my mother was allergic. I tweaked it to my liking and serve to my church and family on special occasions.

Ingredients

chicken breast halves, skinless and boneless
1/2 c
mango chunks
1/2 c
mango nectar
1 Tbsp
olive oil
1/2 tsp
cinnamon
1 tsp
ground ginger
1/2 c
orange juice, fresh
2 Tbsp
lime juice, fresh
2 Tbsp
honey
2 Tbsp
cornstartch
1 1/2 Tbsp
water(for cornstarch)
2 Tbsp
dark rum
salt and pepper

How to Make Mango Chicken

Step-by-Step

  • 1Season chicken with salt and pepper (to taste). Place oil in a skillet and turn heat to med-high. When oil is hot sear the chicken on both sides. set aside.
  • 2In a medium to large non-stick pot add all other ingredients and let simmer for 10 minutes. Add the chicken and let simmer for 15 more minutes or until meat is complete done.
  • 3At this time mix the cornstarch and water together. Add to the sauce until you reach your desired thickness.
