mango chicken
I originally got the recipe from yummly.com but there were so many ingredients I didn't like or my mother was allergic. I tweaked it to my liking and serve to my church and family on special occasions.

Ingredients
- 2 - chicken breast halves, skinless and boneless
- 1/2 cup mango chunks
- 1/2 cup mango nectar
- 1 tablespoon olive oil
- 1/2 teaspoon cinnamon
- 1 teaspoon ground ginger
- 1/2 cup orange juice, fresh
- 2 tablespoons lime juice, fresh
- 2 tablespoons honey
- 2 tablespoons cornstartch
- 1 1/2 tablespoons water(for cornstarch)
- 2 tablespoons dark rum
- - salt and pepper
How To Make mango chicken

Step 1Season chicken with salt and pepper (to taste). Place oil in a skillet and turn heat to med-high. When oil is hot sear the chicken on both sides. set aside.

Step 2In a medium to large non-stick pot add all other ingredients and let simmer for 10 minutes. Add the chicken and let simmer for 15 more minutes or until meat is complete done.

Step 3At this time mix the cornstarch and water together. Add to the sauce until you reach your desired thickness.
