when the kids have a cravin for pizza but me the "mama" wants to cook chicken, this is the recipe that gives us the best of both worlds. it has the chicken and all the lovely pizza flavors they crave.

Ingredients

  • 1
    onion peeled and chopped
  • 1 Tbsp
    olive oil
  • 3
    chicken breasts chopped
  • 2
    garlic cloves peeled and thinly sliced
  • 2 tsp
    dried oregano
  • 2
    tins chopped tomatoes
  • 2
    balls mozzarella cheese thinly sliced
  • 50-100 g
    sliced pepperoni

How to Make mama's italian chicken bake

Step-by-Step

  1. pre-heat oven to 375f. In a frying pan fry the onion in the oil until clear
  2. Add the chopped chicken and fry browing them for 5-6mins. Add the garlic and oregano and fry for 1-2 mins before pouring in the tomatoes. Let it cook for 5 mins
  3. Pour the chicken and tomatoes into an ovenproof dish. Top with mozzarella and then with the pepperoni
  4. Bake for 25-30 mins until pepperoni is golden brown and turning up at the edges.

    Serve with garlic bread to soak up the juices.
