    boneless chicken breasts
  • 2 large
    eggs, beaten
  • 1 c
    crushed pork rinds
  • 1/3 c
    parmesan cheese
  • 2 Tbsp
    olive oil
  • 1 Tbsp
    coconut oil
  • 1 tsp
    salt
  • 1 tsp
    black pepper
  • SWEET AND SOUR SAUCE

  • 1/2 c
    swerve or sucralose
  • 1/2 c
    rice vinegar
  • 4 Tbsp
    reduced sugar ketchup
  • 1 Tbsp
    soy sauce
  • 1 tsp
    garlic powder

How to Make Low Carb Sweet and Sour Chicken

Step-by-Step

  1. Cut chicken into cubes Combine all the coating ingredients in a food processor and then coat the chicken by dipping into egg and then into the pork rind crumbs.
  2. Cook chicken in batches in a cast iron skillet over medium heat.
  3. Reduce Sauce in pan while chicken is cooking.
  4. Coat chicken with sauce and mix together.
