Ingredients
- 1 cup sundried tomatoes
- 1 bunch green onions washed & chopped
- 2 packages purdue italian flavored chicken chunks
- 1/2 cup olive oil, extra virgin
- 1 bag fresh baby spinach
- 1 pound angel hair pasta
- 1 cup half and half
- 2 large fresh lemons
- 1 teaspoon crushed red pepper
- 1 teaspoon salt
- 1 cup pasta water
- 1/2 cup parmigiano-reggiano, grated
- 1/2 cup feta cheese crumbles
How To Make lemon zested chicken angel hair pasta

Step 1place sundried tomaoes in olive oil and set aside for 1/2 hour. Start salted water in large pot to boil for pasta

Step 2chop onions and place in large frying pan with chicken and sundried tomatoes in EVO. Turn heat on medium under pan.

Step 3place angel hair pasta in boiling water and cook until almost done.

Step 4add pasta water to chicken mixture. Add zest from two lemons, crushed red pepper, juice of two lemons, baby spinach and half & half. Stir and keep on low heat. Drain pasta and add to the chicken mixture.

Step 5top with grated parmesan and feta cheese crumbles.

Step 6ENJOY!! serve with Texas Garlic Toast.
