Ingredients

  • 1 cup sundried tomatoes
  • 1 bunch green onions washed & chopped
  • 2 packages purdue italian flavored chicken chunks
  • 1/2 cup olive oil, extra virgin
  • 1 bag fresh baby spinach
  • 1 pound angel hair pasta
  • 1 cup half and half
  • 2 large fresh lemons
  • 1 teaspoon crushed red pepper
  • 1 teaspoon salt
  • 1 cup pasta water
  • 1/2 cup parmigiano-reggiano, grated
  • 1/2 cup feta cheese crumbles

How To Make lemon zested chicken angel hair pasta

  • Step 1
    place sundried tomaoes in olive oil and set aside for 1/2 hour. Start salted water in large pot to boil for pasta
  • Step 2
    chop onions and place in large frying pan with chicken and sundried tomatoes in EVO. Turn heat on medium under pan.
  • Step 3
    place angel hair pasta in boiling water and cook until almost done.
  • Step 4
    add pasta water to chicken mixture. Add zest from two lemons, crushed red pepper, juice of two lemons, baby spinach and half & half. Stir and keep on low heat. Drain pasta and add to the chicken mixture.
  • Step 5
    top with grated parmesan and feta cheese crumbles.
  • Step 6
    ENJOY!! serve with Texas Garlic Toast.
