  • 1 c
    sundried tomatoes
  • 1 bunch
    green onions washed & chopped
  • 2 pkg
    purdue italian flavored chicken chunks
  • 1/2 c
    olive oil, extra virgin
  • 1 bag(s)
    fresh baby spinach
  • 1 lb
    angel hair pasta
  • 1 c
    half and half
  • 2 large
    fresh lemons
  • 1 tsp
    crushed red pepper
  • 1 tsp
    salt
  • 1 c
    pasta water
  • 1/2 c
    parmigiano-reggiano, grated
  • 1/2 c
    feta cheese crumbles

How to Make Lemon Zested Chicken Angel Hair Pasta

Step-by-Step

  1. place sundried tomaoes in olive oil and set aside for 1/2 hour. Start salted water in large pot to boil for pasta
  2. chop onions and place in large frying pan with chicken and sundried tomatoes in EVO. Turn heat on medium under pan.
  3. place angel hair pasta in boiling water and cook until almost done.
  4. add pasta water to chicken mixture. Add zest from two lemons, crushed red pepper, juice of two lemons, baby spinach and half & half. Stir and keep on low heat. Drain pasta and add to the chicken mixture.
  5. top with grated parmesan and feta cheese crumbles.
  6. ENJOY!! serve with Texas Garlic Toast.
