sundried tomatoes
1 bunch
green onions washed & chopped
2 pkg
purdue italian flavored chicken chunks
1/2 c
olive oil, extra virgin
1 bag(s)
fresh baby spinach
1 lb
angel hair pasta
1 c
half and half
2 large
fresh lemons
1 tsp
crushed red pepper
1 tsp
1 c
pasta water
1/2 c
parmigiano-reggiano, grated
1/2 c
feta cheese crumbles

How to Make Lemon Zested Chicken Angel Hair Pasta


  • 1place sundried tomaoes in olive oil and set aside for 1/2 hour. Start salted water in large pot to boil for pasta
  • 2chop onions and place in large frying pan with chicken and sundried tomatoes in EVO. Turn heat on medium under pan.
  • 3place angel hair pasta in boiling water and cook until almost done.
  • 4add pasta water to chicken mixture. Add zest from two lemons, crushed red pepper, juice of two lemons, baby spinach and half & half. Stir and keep on low heat. Drain pasta and add to the chicken mixture.
  • 5top with grated parmesan and feta cheese crumbles.
  • 6ENJOY!! serve with Texas Garlic Toast.
