- 1 large chicken cut up
- 4 teaspoons melted butter
- 1 can flaked coconut
- 3/4 cup finely crushed wheat thin crackers
- 1 teaspoon grated lemon peel
- 1/2 teaspoon salt
- 1/2 teaspoon ginger
- 2 large eggs
How To Make lemon chicken

Step 1Melt butter in shallow baking dish. Mix coconut, cracker crumbs, lemon peel, salt and ginger

Step 2Dip chicken in beaten egg and then in coconut mixture and place in baking dish.

Step 3add lemon juice on top if you wish then bake at 350 degrees
