lea's homemade chicken nuggets
My sons and the little ones in our family LOVE chicken nuggets. This spice combination is a recipe from Paul Prudhomme,changed up a bit. My husband calls me Lea so I named these Lea's homemade chicken nuggets. Some of the kids dunk these in Ranch dressing or BBQ sauce.

- - salt
- - 1 t. cayenne
- - 1/2 t each of white pepper,onion powder,garlic powder,paprika and black pepper
- - chicken breasts,cut into small(nugget size) pieces
- - all purpose flour
- - bread crumbs
- - eggs,beaten
- - canola or peanut oil
How To Make lea's homemade chicken nuggets

Step 1Mix cayenne,and each of the spices in a small dish.Season chicken with spice mixture and salt to taste. Season flour and bread crumbs with spice mixture,place in individual shallow bowls,beat eggs and season with spice mixture,place in a shallow bowl. Heat oil in cast iron skillet or deep fryer.Dredge chicken in flour,eggs then breadcrumbs,fry until chicken is golden brown and chicken is done.

Step 2Side Note: I make breadcrumbs by tearing up slices of bread,grind the slices in blender until fine. You can use any bread,wheat,white,french bread.I usually freeze the ends of the bread and use them.No need to brown,they'll crisp when chicken is cooked.
