Ingredients

  • 4 small boneless skinless chicken breast halves (1lb)
  • 1 cup taco bell home originals thick 'n chunky salsa
  • 15 ounces can black beans, undrained
  • 1 cup shredded cheddar cheese

  • Step 1
    Cook chicken in nonstick skillet on medium-high heat 4 minutes on each side or until browned on both sides.
  • Step 2
    Add salsa and beans. Bring to a boil; cover. Simmer on medium-low heat 5 minutes or until chicken is done.
  • Step 3
    Top with cheese. Remove from heat. Let stand, covered, 5 minutes or until cheese is melted.
  • Step 4
    Substitute: Prepare using 8 boneless skinless chicken thighs.
