Ingredients For just peachy kabobs

  • 2 - 3 lb
    boneless, skinless chicken breast - cubed or pork
  • 1 c
    butter, cubed
  • 1
    peach - peeled and diced small
  • 1 c
    peach preserves
  • 1 Tbsp
    fresh lime juice
  • 1 - 2 clove
    minced garlic
  • 1/2 tsp
    dijon mustard
  • salt
    & pepper if desired

How To Make just peachy kabobs

    In a medium microwave safe bowl, add the butter, diced peaches and preserves. Place in microwave and set for 2 - 3 minutes or until butter is melted and peaches are softened. Stir in the mustard, lime juice and garlic. Set aside 1/2 cup peach mixture. ( I usually make 1 1/2 recipe of sauce) In a large zip lock baggie, add the cubed chicken and remaining peach mixture. Seal bag and turn to coat. Marinade for at least an hour, longer if possible. Remove chicken from marinade. Place pieces of chicken on skewers, however many you desire for each. When ready to grill, heat grill to med - high and lubricate grids with oil. When hot enough, place skewers of chicken on grill, close lid and grill on each side 4 - 5 minutes. Basting with remaining peach mixture, each time turned. ( I usually just turn from one side to the other- 2 turns in all. If any peach mixture remains, give the chicken one final basting once cooked. Season if desired. Enjoy!
