I received this recipe from a friend many years ago. I have made it with leftover turkey and it is delicious.

Ingredients
- 4 cups cubed cooked chicken or turkey. approximately 8 chicken breast
- 2 tablespoons lemon juice
- 2/3 cup almonds, chopped
- 3/4 cup mayonnaise
- 1 teaspoon salt
- 1 cup grated cheddar cheese
- 2 cups celery, chopped
- 4 - hard boiled eggs, sliced
- 1 can cream of chicken or mushroom soup
- 1 tablespoon onion, minced
- 1 cup potato chips, crushed
- 1/4 cup green pepper, chopped
- 2 cans water chestnuts, sliced
How To Make hot chicken salad

Step 1Saute the chopped almonds in butter until browned

Step 2Combine chicken cubes with all ingredients except the potato chips

Step 3Put into a 9 X 13 inch baking dish

Step 4Sprinkle the top with the potato chips

Step 5Bake 20 - 25 minutes in a 375 degree oven

Step 6The casserole can be made ahead of time and refrigerated or frozen. If this is done the potato chips should not be added until ready to go into the oven.
