homestyle chicken and dumplings

This is a perfect recipe for that chilly fall day, its warm, filling, and delicious!

Ingredients

  • 1 medium yellow onion
  • 3 cloves minced garlic
  • 1/2 stick butter
  • 1/2 cup ap flour
  • 4 cups milk
  • 16 cups homemade chicken stock (see my recipe)
  • - the meat from one roasted chicken(see my recipe)
  • - pepper to taste
  • - salt to taste
  • 1 tablespoon dried parsley
  • FOR THE DUMPLINGS
  • 4 cups ap flour
  • 2 tablespoons baking powder
  • 2 tablespoons vegatable oil
  • 1 tablespoon salt
  • 2 tablespoons chopped parsley or cilantro (optional)
  • 1 cup lukewarm water

How To Make homestyle chicken and dumplings

  • Step 1
    melt butter in your stockpot, then saute your onions and minced garlic, until slightly transparent.
  • Step 2
    add flour to make a roux, slowly add milk, allowing to thicken between increments.
  • Step 3
    add chicken, and start adding stock, about a cup-full at a time, and allow to thicken between each addition.
  • Step 4
    once soup is built, allow to come to a slow boil, and start dumplings.
  • Step 5
    To make the dumplings: measure flour into a large mixing bowl, add parsley/cilantro here if tou wanted it, mix well.
  • Step 6
    add baking powder and salt, mix well, then add oil. after oil is added, mix water gradually, until you get to your preferred consistancy.
  • Step 7
    while soup is boiling, drop dumpling batter by rounded spoonful, cook 4-8 minutes, depending on how big you make them.
  • Step 8
    salt and pepper to taste, allow to cool for a moment, then serve.
