Homestyle Chicken and Dumplings
homemade chicken stock (see my recipe)
the meat from one roasted chicken(see my recipe)
FOR THE DUMPLINGS
chopped parsley or cilantro (optional)
1melt butter in your stockpot, then saute your onions and minced garlic, until slightly transparent.
2add flour to make a roux, slowly add milk, allowing to thicken between increments.
3add chicken, and start adding stock, about a cup-full at a time, and allow to thicken between each addition.
4once soup is built, allow to come to a slow boil, and start dumplings.
5To make the dumplings: measure flour into a large mixing bowl, add parsley/cilantro here if tou wanted it, mix well.
6add baking powder and salt, mix well, then add oil. after oil is added, mix water gradually, until you get to your preferred consistancy.
7while soup is boiling, drop dumpling batter by rounded spoonful, cook 4-8 minutes, depending on how big you make them.
8salt and pepper to taste, allow to cool for a moment, then serve.
