This is a great filipino staple. Adobo can also be made with any type of meats or fish but usually we use chicken or pork. You can also omit the coconut milk if you wish.

Ingredients

  • 1 kilogram chicken
  • 1/2 cup soy sauce
  • 1/2 cup vinegar
  • 1/4 teaspoon black pepper
  • 6 cloves garlic
  • 1 tablespoon ginger (coarsely chopped or strips)
  • 1 cup coconut milk (unsweetened and pure)
  • 1 - bay leaf (put it in while it is simmering) discard before serving

How To Make grilled chicken adobo with coconut milk

  • Step 1
    Grill chicken just until brown and has a nice char on them (charcoal grill adds great flavor). Saute the garlic and the ginger. Then add the chicken, soy sauce and then simmer so the chicken will continue to cook. Add ground pepper, bay leaf, and vinegar, cover and simmer.
  • Step 2
    Stir ocassionally until it is almost done, pour in the coconut milk simmer until done.
  • Step 3
    Serve it hot with jasmine rice ;) enjoy!
