This is a general recipe for juicy grilled chicken that can be changed by the spices you use. You can use basic BBQ flavored spices or go with a Greek , Indian, Italian, or Mexican profile just by changing the spices you add.
1Cut chicken in half . Prepare brine by combining warm water, salt, sugar and 2 T of chicken spice, reserving other 1T for later ,let brine cool. Place chicken halves in brine and refrigerator over night.Try to get at least a 8 hr soak.
2Remove chicken from brine, no need to rinse. Place on tray and season with remaining spices .
3Place chicken bone down on hot grills (350) turning over a few times (just to get good grill marks on skin side but do not burn) till temp reaches 165-170. Bast with BBQ sauce for 5 min. Remove chicken and let set for 10 min. Total cooking time about 45 min depending on grill temp.
