1Salt and pepper the chicken. Saute a couple of the cloves of garlic in the olive oil and brown the chicken.
2Press the remaining garlic cloves and spread over the chicken and under the skin of the chicken
3Place the chicken in a 9x13 baking pan and spoon a couple of teaspoon of the tomato paste over the chicken. Bake at 375 for an hour until juices run clear, Serve with a side of pasta, a salad, and garlic bread.
