This is one of my kids favorites (and mine). Its quick and easy and very very tasty. A fried chicken with a Japanese twist. Delicious with rice but we love it with mash potato (Irish style - called champ) comfort food at its best

Ingredients

8-10
boneless, skiness chicken thighs
1 inch
fresh ginger finely grated
3 Tbsp
mirin. (rice wine similar to sake)
3 Tbsp
dark soy sauce
1/2 tsp
rock salt
125 g
cornflour
veg. oil. for deep frying

How to Make Fried Chicken with a Japanese Twist

Step-by-Step

  • 1place chicken in a large dish and prick all over with a skewer. Squeeze the fresh ginger in a bowl until you get about 2 tsp
  • 2Add the mirin and soy sauce and mix well. Pour over the chicken and coat well. leave to marinade in a fridge for 20 mins
  • 3In a dish mix the cornflour and salt. roll each chicken piece in the mixture until coated. Heat 2 inches oil in a deep pan until it bubbles. Add a few pieces of chicken at a time and cook for 5 mins. turning regurlally until golden and crisp. Drain on kitchen paper
  • 4Serve hot with rice or mash potato
