Ingredients
- 3-4 pounds chicken pieces
- 1 small onion, diced
- 1 small green pepper, diced
- 4 - garlic cloves, diced
- 2 cans tomato sauce
- 1 cup white cooking wine
- 1 cup water
- 1/4 cup green olives
- 1/2 cup red pimentos
- 2 - bay leaves
- 1/4 cup olive oil
- 2 medium potatoes large dice
- - salt/pepper to taste
How To Make fricase de pollo...chicken fricase

Step 1In a large pot on medium high....pour olive oil and brown chicken in batches about 2-3 minutes per side.

Step 2remove and set aside....add the onions, peppers & garlic...cook a few minutes....add the wine to deglaze....add chicken back in, as well as the rest of the ingredients....stir and simmer until chicken and potatoes are cooked through and fork tender.....enjoy with white rice...
