elaine skochenko's chicken-cashew noodle casserole
Mom gave me several recipes when I got married. I still have her recipe cards, all done on her typewriter. Mom had to work full time and raise two daughters alone. She rarely had time to cook for us, but when she did it was wonderful! This is one of her recipes.

Ingredients
- 2 cups chicken, cooked and diced
- 1 cup diced celery
- 1 bunch diced green onion, all parts
- 1/2 cup milk
- 2 cans chow mein noodles
- 2 cans cream of chicken soup (or cream of celery, mushroom etc.)
- 1/2 cup cashews (or use as many as you want)
- 1/4 cup frozen peas
- - butter to grease casserole dish

Step 1Grease casserole dish (9x13 or oval)

Step 2Preheat oven to 350*

Step 3Line bottom of casserole dish with 1 can chow mein noodles.

Step 4You can use rotisserie chicken, canned chicken, or cook your own chicken tenders in broth. Layer with chicken pieces, frozen peas, diced celery and onions.

Step 5Thin cream of chicken soup with milk and pour over top.

Step 6Cover with second can of chow mein noodles. Sprinkle cashews on top.

Step 7Bake at 350* for 40 min. (Watch so cashews don't get too brown)
