Ingredients
- 1 package mexican rice
- 2 - 3 cups diced chicken breast
- 1 package taco seasoning mix
- 1 can enchilada sauce
- 2 cups shredded mexican cheese
- 1 package medium sized flour tortillas
- 1 bunch green onions
- 2 tablespoons vegetable oil
How To Make easy chicken enchiladas

Step 1Prepare the Mexican rice according to the directions and set aside.

Step 2Heat the oil in a skillet and add the chicken. When it's cooked through add some of the taco seasoning and about 2 tablespoons of water. Saute that for just a few more minutes.

Step 3Add the chicken to the rice and mix together. Roll a scoop of the mixture into each tortilla shell and line them up on a baking sheet.

Step 4Pour the enchilada sauce evenly over all of the tortillas and then cover it in the shredded cheese.

Step 5Bake at 350° for 15 - 20 minutes. Serve with chopped green onions and sour cream.
