Ingredients

  • 1 package mexican rice
  • 2 - 3 cups diced chicken breast
  • 1 package taco seasoning mix
  • 1 can enchilada sauce
  • 2 cups shredded mexican cheese
  • 1 package medium sized flour tortillas
  • 1 bunch green onions
  • 2 tablespoons vegetable oil

How To Make easy chicken enchiladas

  • Step 1
    Prepare the Mexican rice according to the directions and set aside.
  • Step 2
    Heat the oil in a skillet and add the chicken. When it's cooked through add some of the taco seasoning and about 2 tablespoons of water. Saute that for just a few more minutes.
  • Step 3
    Add the chicken to the rice and mix together. Roll a scoop of the mixture into each tortilla shell and line them up on a baking sheet.
  • Step 4
    Pour the enchilada sauce evenly over all of the tortillas and then cover it in the shredded cheese.
  • Step 5
    Bake at 350° for 15 - 20 minutes. Serve with chopped green onions and sour cream.
