My husband loves Mexican food in any way he can get it. This is always a big hit with him and my 3 year old son loves it too.

Ingredients

  • 6 - boneless, skinless chicken breasts
  • 1 cup salsa
  • 8 ounces tomato sauce
  • 14 1/2 cans chicken broth
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped onion
  • - salt and garlic powder and pepper to taste
  • 1 3/4 cups instant rice
  • 1/2 cup shredded monterrey jack cheese
  • 1/2 cup shredded cheddar cheese

How To Make easy arroz con pollo

  • Step 1
    Spread rice in a greased 13x9x2 inch casserole pan. Sprinkle both sides of each chicken breasts with salt, pepper and garlic powder and lay on top of rice.
  • Step 2
    In a large bowl, mix broth, salsa, tomato sauce, onion, and green pepper. Pour over chicken.
  • Step 3
    Cover and bake for 55 minutes at 350 or until rice is done and liquid is absorbed. Uncover and sprinkle with cheeses and bake uncovered for about 10 minutes or until cheese is melted.
