this is cooked in a cast iron dutch oven out side while camping or at the hunting camp. just plain good. i added where the coals go in step 4 because i had someone put then in the pot. no joke.

5 lbchicken breast (cut into stir-fry size chunks)

1 canenchilada sauce (19 oz)

25 smcorn tortillas

1 cankernel corn (16 oz)

1saute chicken, onions,green peppers, and squash until chicken is cooked through.

2in a 14 inch dutch oven, layer enchilada sauce, tortillas,cheese,canned ingredients, and cooked chicken-and-vegetables mixture.

3mix cornbread with eggs and milk according to box instructions and spread over the top.

4bake for 1 hour using 6 to 8 coals on the bottom and a tight ring of coals around the top. these coals go outside the pot for those trying to cook in a cast iron dutch oven for the first time.(lol)
