this is cooked in a cast iron dutch oven out side while camping or at the hunting camp. just plain good. i added where the coals go in step 4 because i had someone put then in the pot. no joke.

Ingredients

  • THIS CHICKEN QUESADILLA PIE SERVES 10 TO 12 PEOPLE
  • 5 pounds chicken breast (cut into stir-fry size chunks)
  • 2 medium sweet onion (chopped)
  • 2 - green pepper (chopped)
  • 1 large yellow squash (cubed)
  • 1 can enchilada sauce (19 oz)
  • 25 small corn tortillas
  • 2 pounds shredded cheddar cheese
  • 1 can kernel corn (16 oz)
  • 1 can black beans (16 oz)
  • 3 boxes cornbread mix
  • 3 large eggs
  • 1 cup milk

How To Make dutch oven chicken quesadilla pie

  • Step 1
    saute chicken, onions,green peppers, and squash until chicken is cooked through.
  • Step 2
    in a 14 inch dutch oven, layer enchilada sauce, tortillas,cheese,canned ingredients, and cooked chicken-and-vegetables mixture.
  • Step 3
    mix cornbread with eggs and milk according to box instructions and spread over the top.
  • Step 4
    bake for 1 hour using 6 to 8 coals on the bottom and a tight ring of coals around the top. these coals go outside the pot for those trying to cook in a cast iron dutch oven for the first time.(lol)
