delicious spicy chicken nachos

WOW! What a combination! You will savor each bite as you taste the individual spices with each mouthful of this nacho topping. And combined with the chicken gives this recipe the meaty texture that makes it a hit! Hope you like it as much as I did!

Ingredients

  • 3 pounds chicken breasts w/bone & skin
  • 2 medium onions
  • 1 bunch fresh cilantro
  • 2 medium limes
  • 2 tablespoons cumin
  • 1 tablespoon worcestershire sauce
  • 1 tablespoon chili powder
  • 2 cans mild green chilies
  • 1 1/2 tablespoons salt or to taste
  • 3 - chipotle peppers in adobo sauce-whole
  • 6 ounces water
  • 1 bag corn tortilla chips

How To Make delicious spicy chicken nachos

  • Step 1
    Rinse off chicken and place in crock pot.
  • Step 2
    Add one onion, finely chopped, 1/4 cup fresh cilantro, juice of one lime, cumin, worcestershire sauce, chili powder, one can green chilies, water, & salt to taste.
  • Step 3
    Put crock on high. Cook for 2 hours. Remove from crock & dispose of bones and skin. Cut chicken breasts into small chunks & return to crock with spices to cook another 2 hours or until done.
  • Step 4
    When done, use liquid to make thickening (1 c liquid plus 1/2 cup flour), stir well and let simmer for 1/2 hour. Pour over corn tortilla chips.
  • Step 5
    Serve with your favorite toppings - shredded cheeses, sour cream, chopped onions, sliced avocados, fresh cilantro, green chilies. Enjoy!
