curried chicken salad
One of my favorite restaurants, La Grande Orange Grocery, has a chicken curry salad that they sell that is one of the best I have ever had. It is crazy addicting. A few times now, I have tried to duplicate it, failing the first couple tries. Alas, I have perfected the recipe. It’s not exact, but it’s absolutely delicious, loved by many, and very close the original. This is tasty on its own, scooped over a bed of greens, or between two pieces of bread.

Ingredients
- 3 cups diced grilled chicken breast
- 1/4 cup golden raisins
- 1/4 cup almonds, slivered
- 1/4 cup diced celery
- 1 tablespoon diced shallots
- 1/2 - gala apple, diced
- 1 cup mayonnaise
- 1/4 cup honey
- 1 1/2 tablespoons curry powder
- dash salt and pepper
How To Make curried chicken salad

Step 1Season chicken breast as you like, grill, let cool, dice, and add to medium mixing bowl.

Step 2Add raisins, almonds, celery and apple.

Step 3In a separate bowl, mix together the mayo, honey, salt and pepper.

Step 4Add mayo mix to the chicken bowl and toss to coat evenly and blend well.

Step 5Serve over a bed of lettuce, by itself, or as a sandwich. Enjoy!
