I found a very basic recipe for this and improved it greatly with a few simple changes. Base recipe ingredients are chicken breast tenders - chunked, pineapple juice, brown sugar, and soy sauce. the recipe stated to place all in the crockpot for 6-8 hours. Now take a look at my changes.

How to Make Crockpot Hawaiian Chicken

Step-by-Step

  1. Add seasoned flour to medium bowl and set aside. Cut chicken breasts into large bite size chunks. Place in the bowl with seasoned flour and toss in flour until evenly coated. In a large skillet, heat oil over medium high heat 1 or 2 minutes. Add chicken to skillet and braise, 1 or 2 minutes. Place chicken in slow cooker/crockpot. Add mushrooms. In a small bowl, mix pineapple juice, brown sugar, soy sauce, and crushed red pepper. Pour over chicken and mushrooms. Cook on low 5 - 6 hours. In the last 1 - 1 1/2 hours of cooking, add the peppers and onions. Serve over rice. I prefer brown rice but you can use your favorite.
