Slow Cooker Crock Pot


1 1/4 c
chicken broth
1/2 c
brown sugar, firmly packed
1/4 c
2 Tbsp
rice vinegar
2 Tbsp
soy sauce
2 Tbsp
sweet chili sauce
2 Tbsp
2 tsp
dark sesame oil
1 1/2 lb
skinned and boned chicken breasts, cut into 1" pieces
2 c
sugar snap peas
2 c
crinkle-cut carrots
1 1/2 Tbsp
sesame seeds, toasted
hot cooked rice
garnish: chopped green onions


1Whisk together first 8 ingredients in a 4 quart slow cooker. Stir in chicken. Cover and cook on HIGH for 2.5 hours or until chicken is done, stirring after 1.5 hours.
2Steam sugar snap peas and carrots. Stir vegetable mixture and sesame seeds into slow cooker. Serve over hot cooked rice. Garnish with chopped green onions, if desired.
