this is basically a roast chicken to use in preparation for my chicken and dumplings, its a bit of work, but totally worth it.

Ingredients

  • 1
    2 lb. whole chicken
  • 1 stick
    butter, softened
  • 1 Tbsp
    parsley
  • 1/2 Tbsp
    basil
  • 1 tsp
    garlic powder
  • ·
    salt and pepper to taste

How to Make Crispy Skinned Roast Chicken

Step-by-Step

  1. mix herbs and garlic powder with butter, stir well
  2. separate skin from chicken, leaving connected around the edges, and massage butter compound under skin
  3. salt and pepper top of skin
  4. bake at 400 for about 45 minutes, until 165 degrees in the thigh.
