this is basically a roast chicken to use in preparation for my chicken and dumplings, its a bit of work, but totally worth it.

Ingredients

  • 1 - 2 lb. whole chicken
  • 1 stick butter, softened
  • 1 tablespoon parsley
  • 1/2 tablespoon basil
  • 1 teaspoon garlic powder
  • - salt and pepper to taste

How To Make crispy skinned roast chicken

  • Step 1
    mix herbs and garlic powder with butter, stir well
  • Step 2
    separate skin from chicken, leaving connected around the edges, and massage butter compound under skin
  • Step 3
    salt and pepper top of skin
  • Step 4
    bake at 400 for about 45 minutes, until 165 degrees in the thigh.
