this is basically a roast chicken to use in preparation for my chicken and dumplings, its a bit of work, but totally worth it.

Ingredients

1
2 lb. whole chicken
1 stick
butter, softened
1 Tbsp
parsley
1/2 Tbsp
basil
1 tsp
garlic powder
salt and pepper to taste

How to Make Crispy Skinned Roast Chicken

Step-by-Step

  • 1mix herbs and garlic powder with butter, stir well
  • 2separate skin from chicken, leaving connected around the edges, and massage butter compound under skin
  • 3salt and pepper top of skin
  • 4bake at 400 for about 45 minutes, until 165 degrees in the thigh.
