This was a quick dish I threw together, that I couldn't make until daughter got home from work, as she was bringing the pasta I needed. I had everything prepped and ready to go, so it was ready within 20 minutes...mighty tasty too...kids both had seconds...you could use rotisserie chicken to cut the time even more...added vegetables would be great in this dish as well...make it your own...I doubled this recipe for left overs...pasta never goes to waste here.... Ingredients For creamy chicken pasta - my way

  • 8 oz
    penne pasta, cooked and drained
  • 1 lb
    boneless, skinless chicken , cubed - or about 1 1/2 cups rotisserie chicken, cubed
  • salt and pepper for seasoning chicken
  • 1 Tbsp
    oil
  • 1/2 c
    onion, diced
  • 2 - 3 clove
    garlic, minced
  • 4 Tbsp
    butter
  • 4 Tbsp
    flour
  • 2 c
    chicken broth
  • 1 Tbsp
    better than buillon - chicken flavor
  • 1 1/2 tsp
    salt, or to taste
  • 1 tsp
    pepper
  • 1 tsp
    italian seasoning
  • 1/2 c
    sour cream
  • 1/2 Tbsp
    parsley flakes

How To Make creamy chicken pasta - my way

    Cook pasta according to box instructions. Drain

    Cube chicken, salt and pepper. In a dutch oven,over medium heat; add oil - once hot, add the chicken, onion and garlic. Cook until chicken runs clear and onions translucent.

    Once vegetables and chicken are cooked, add the butter... mix in flour, keep stirring for a couple minutes.

    In a bowl, whisk the bouillon into the broth. Pour the chicken broth, Italian seasoning, salt and pepper into the chicken mixture; stirring frequently until sauce comes to simmer.

    Remove from heat, and stir in the sour cream. Stir in the drained pasta and parsley. Heat through. I now taste and adjust seasoning.

    Pour in the drained pasta. Stir and heat through. Some quick melting cheese would be great in this dish as well. Red pepper flakes are great sprinkled on the pasta as well. Enjoy!
