If you're looking for an easy casserole look no more! I make this when I need a quick lunch or dinner. It's just a great "go to" casserole.

  • 1/2 stick
  • 1/2 c
    diced onion
  • 2 c
    chicken stock
  • 3/4 c
    sour cream
  • 2 Tbsp
  • 1/2 tsp
    poultry seasoning
  • 1/2 tsp
  • 1 tsp
  • 4 c
    steamed broccoli (i buy the broccoli in the bag for steaming)
  • 4 c
    diced roasted chicken (bought works great)
  • 2-3 c
    cheese of choice (grated)
  • 1 can(s)
    french fried onions
  • 2 pkg
    uncle ben's basmati rice,(do in microwave)

How to Make Creamy Chicken Broccoli Casserole


  1. In a medium size pan saute onion in butter.
  2. Add chicken stock, sour cream, mayo, poultry seasoning, salt, and pepper
  3. Cook rice according to directions on package and fold in.
  4. Pour cream and rice sauce over chicken
  5. Place diced chicken in 9x13 baking dish.
    Add broccoli on top
    Cover and bake 20 minutes
  6. Uncover : add cheese and french fried onions.
    Bake 10 minutes longer or until onions are lightly browned.
