coconut tomato chicken over sazon goya rice

Ingredients
- 2 large chicken breast skinned and cut into bite size pieces
- 1/4 cup baking soda
- 2 - bay leaves
- 1 teaspoon turmeric, ground
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon chili powder
- 1/4 teaspoon black pepper
- 1 medium onion chopped
- 3 cloves garlic chopped
- 3 - roma tomatoes chopped
- 1 tablespoon ginger paste
- 1/4 cup olive oil
- 1 can coconut milk
- 2 cups chicken stock
- 2 cups jasmine rice
- 1 tablespoon sazon goya seasoning
How To Make coconut tomato chicken over sazon goya rice

Step 1Sprinkle baking soda over chicken and lightly rub and let sit 30 minutes. Rinse well. Now chicken is ready to use.

Step 2Add olive oil to saute pan and saute onions until translucent. Add onions to food processor and add tomatoes, turmeric, cumin, salt, chili powder, pepper, garlic, coconut milk and ginger paste. Process until smooth.

Step 3Add chicken to saute pan and pour coconut milk mixture over top. Add bay leaves. Cook on med for 30 minutes or until chicken is done.

Step 4Meanwhile add chicken stock to pan with sazon goya seasoning. Bring to a boil. Add rice and cook over med heat for 20 minutes or until rice is cooked and most of liquid is absorbed.

Step 5Serve chicken over rice.
