Ingredients
- 1 tablespoon olive oil or vegetable oil
- 3/4 pound boneless, skinless chicken breasts, cut into 1/2- inch thick strips
- 2 cloves garlic, minced
- 2 cups broccoli florets, cut into bite size pieces
- 2 medium carrots, thinly sliced
- 1 medium onion, chopped
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes
- salt, to taste
- 3 cups cooked rice
- 1 can (14 1/2 ounce) italian style diced tomatoes
- 1/4 cup (1 ounce) grated parmesan cheese
How To Make classic chicken and rice primavera

Step 1Heat oil in 12- inch skillet over medium-high heat. Add chicken and garlic; cook, stirring 5 to 7 minutes or until chicken begins to brown.

Step 2Add broccoli, carrots, onion, Italian seasoning, red pepper flakes and salt. Cook, stirring 3 to 4 minutes or until vegetables are tender.

Step 3Add rice and tomatoes. Stir until blended and thoroughly heated. Remove from heat; stir in Parmesan cheese.
