Ingredients

  • 3 lb
    chicken wing pieces
  • 4 Tbsp
    bottled ginger juice
  • 2 Tbsp
    tamari
  • 2 tsp
    hoisin sauce
  • 1 tsp
    salt
  • 2 Tbsp
    brown sugar
  • 1/2 tsp
    white pepper
  • 4 Tbsp
    white rice flour
  • 2 tsp
    sesame oil
  • 3-4 c
    vegetable oil

How to Make Chinese Fried Chicken Wings

Step-by-Step

  1. In a large mixing bowl whisk together all ingredients EXCEPT chicken wings and rice flour.
  2. Add wings and toss to coat well.
  3. Add rice flour, using hands combine well-massage chicken so to speak.
  4. Cover and place in fridge for 6-8 hours, tossing once.
  5. In a large dutch oven or fry pot heat oil over medium high heat.
  6. Fry chicken pieces in 2 batches, around 6-8 minutes each batch, stirring often. Let fatter pieces cook an extra 2 minutes.
  7. Drain and serve hot.
