chicken salad for sandwiches
I think out of all the ways you can make sandwiches like, tuna salad and such, chicken is my favorite. This is the last recipe that I got out of that old Southern Living magazine. Instead of the "dill" pickle relish I used "sweet" pickle relish. And the original recipe called for swiss cheese but I just couldn't bring myself to take away from the classic flavor of chicken salad by using cheese.

Ingredients
- 2 cups cubed cooked chicken
- 1/2 cup sweet pickle relish
- 2/3 cup mayonnaise
- 1 tablespoon minced fresh parsley
- 1 teaspoon lemon juice
- 1.2 teaspoons seasoned salt
- 1/8 teaspoon pepper
- 6 - lettuce leaves
- 6 - croissants, split
How To Make chicken salad for sandwiches

Step 1In a large bowl, combine the chicken and pickle relish. In another bowl, combine the mayonnaise, parsley, lemon juice, seasoned salt and pepper; add to chicken mixture and mix well.

Step 2Place a lettuce leaf on each crossaint; top with about 1/2 cup of chicken mixture.
