Chicken Salad for Sandwiches

I think out of all the ways you can make sandwiches like, tuna salad and such, chicken is my favorite.

This is the last recipe that I got out of that old Southern Living magazine.

Instead of the "dill" pickle relish I used "sweet" pickle relish. And the original recipe called for swiss cheese but I just couldn't bring myself to take away from the classic flavor of chicken salad by using cheese.

Ingredients

2 c
cubed cooked chicken
1/2 c
sweet pickle relish
2/3 c
mayonnaise
1 Tbsp
minced fresh parsley
1 tsp
lemon juice
1.2 tsp
seasoned salt
1/8 tsp
pepper

croissants, split

How to Make Chicken Salad for Sandwiches

Step-by-Step

  • 1In a large bowl, combine the chicken and pickle relish. In another bowl, combine the mayonnaise, parsley, lemon juice, seasoned salt and pepper; add to chicken mixture and mix well.
  • 2Place a lettuce leaf on each crossaint; top with about 1/2 cup of chicken mixture.
