Ingredients
- - 5-6 legs and thighs – with skin
- - 1 sweet onion – diced
- - 2 vine ripe tomatoes – diced
- - 1 bell pepper – sliced
- - ¼ cup ketchup
- - 3-4 tbs. teriyaki sauce
- - 1 tsp. sugar
- - 1 tsp. salt
- - ½ tsp. red pepper flakes
- - 1 tsp. turmeric
- - 2 tsp. ground coriander
- - ½ tsp. cloves
- - 1 tsp. ground cumin
- - 3 tbs. balsamic vinegar
- - 2 tbs. vegetable oil
- - brown sugar for dusting the top of the chicken
How To Make chicken quarters with sweet tomato sauce

Step 1Preheat Oven 350 degrees: Place the chicken in a baking pan. Combine the onions, tomatoes, ketchup, teriyaki sauce, sugar, salt, red pepper flakes, coriander, cloves, cumin, balsamic vinegar and vegetable oil in a bowl and toss. Pour the mixture over the chicken and place in the oven. Bake 50-55 minutes or until the juices run clear and a nice golden color is on the chicken.
