    5-6 legs and thighs – with skin
  • ·
    1 sweet onion – diced
  • ·
    2 vine ripe tomatoes – diced
  • ·
    1 bell pepper – sliced
  • ·
    ¼ cup ketchup
  • ·
    3-4 tbs. teriyaki sauce
  • ·
    1 tsp. sugar
  • ·
    1 tsp. salt
  • ·
    ½ tsp. red pepper flakes
  • ·
    1 tsp. turmeric
  • ·
    2 tsp. ground coriander
  • ·
    ½ tsp. cloves
  • ·
    1 tsp. ground cumin
  • ·
    3 tbs. balsamic vinegar
  • ·
    2 tbs. vegetable oil
  • ·
    brown sugar for dusting the top of the chicken

How to Make Chicken Quarters with Sweet Tomato Sauce

Step-by-Step

  1. Preheat Oven 350 degrees:

    Place the chicken in a baking pan.

    Combine the onions, tomatoes, ketchup, teriyaki sauce, sugar, salt, red pepper flakes, coriander, cloves, cumin, balsamic vinegar and vegetable oil in a bowl and toss.

    Pour the mixture over the chicken and place in the oven.

    Bake 50-55 minutes or until the juices run clear and a nice golden color is on the chicken.
