Chicken Parmesan Pasta Salad

Years ago I always brought this salad to cook outs, everybody loved it! I made it with two boxes of parmesan suddenly salad and mixed in veggies and chicken. Of course they dont make the salad anymore. But it wasn't very hard to figure out.
Here is my version, its a nice summer side salad, or a great main dish for those hot summer days.

Ingredients

  • 1 box
    16 oz cooked and drained pasta any kind
  • 21/2 c
    fresh chopped veggies (used broccoli carrots cauliflower)
  • 1/2
    chopped onion
  • 1/2
    chopped red pepper
  • 1/2
    chopped green pepper
  • 1
    chopped english cucumber
  • 21/2 c
    chunked chopped roasted chicken
  • DRESSING

  • 1/2 c
    mayonnaise
  • 1/2 c
    sour cream
  • 1/4 c
    parmesan cheese
  • 1/2 tsp
    pepper
  • 1 tsp
    garlic powder
  • 1/4 tsp
    salt
  • 2 Tbsp
    apple cider vinegar
  • TOPPING MIX

  • 1/4 c
    parmesan cheese
  • 1/4 tsp
    fresh cracked pepper

How to Make Chicken Parmesan Pasta Salad

Step-by-Step

  1. In large bowl add all chopped salad ingredients. Making sure Your pasta is cooked in salted water.

    Mix all dressing ingredients except vinegar. When all mixed whisk in enough apple cider vinegar to thin out.
  2. Pour dressing over salad ingredients. Mix well.

    Top with parmesan pepper mix, cover and refrigerate 4hrs or overnite.
    Before serving Mix again and ENJOY!
