chicken parmesan casserole
This is my version of a recipe found on Pinterest. It's so much easier than traditional Chicken Parmesan and oh so delicious!! And it's easy to adapt based on how many people you're serving. Use 1 chicken breast per person and about 3/4 c. of sauce per chicken breast. This could easily be made in individual ramekin dishes as well. I'd love to tell you it makes great left-overs but there aren't any! My family LOVES this dish! Ingredients
- 4 - chicken breasts, diced
- 1/2 teaspoon minced garlic
- 1/4-1/2 teaspoon red pepper flakes
- 4 cups pasta sauce (see my other recipes for my homemade sauce)
- 3 cups queso chihuahua cheese (or use mozzarella or monterey jack cheese)
- 1 cup shredded Parmesan cheese
- 1 teaspoon Italian blend Mrs. Dash
- 1 cup seasoned croutons, crushed (use more or less based on your preference)
How To Make chicken parmesan casserole

Step 1Preheat oven to 350 degrees F. Spray 13x9 glass dish or individual oven-safe bowls with nonstick spray.

Step 2Dice chicken breast and spread along bottom of prepared dish. Sprinkle minced garlic and pepper flakes over chicken.

Step 4In a bowl combine cheeses; spread over sauce in dish. Dust with Mrs. Dash Italian seasoning. Spread crushed croutons on top.

Step 5Bake for about 40-45 minutes until chicken is thoroughly cooked. If you'd like, serve with a salad and garlic bread.
