Chicken Parmesan Casserole

Teresa Jacobson

This is my version of a recipe found on Pinterest. It's so much easier than traditional Chicken Parmesan and oh so delicious!! And it's easy to adapt based on how many people you're serving. Use 1 chicken breast per person and about 3/4 c. of sauce per chicken breast. This could easily be made in individual ramekin dishes as well. I'd love to tell you it makes great left-overs but there aren't any! My family LOVES this dish! My recipe for FABULOUS pasta sauce Loaded Veggie Pasta Sauce- slow cooker

chicken breasts, diced
1/2 tsp
minced garlic
1/4-1/2 tsp
red pepper flakes
4 c
pasta sauce (see my other recipes for my homemade sauce)
3 c
queso chihuahua cheese (or use mozzarella or monterey jack cheese)
1 c
shredded Parmesan cheese
1 tsp
Italian blend Mrs. Dash
1 c
seasoned croutons, crushed (use more or less based on your preference)

1Preheat oven to 350 degrees F. Spray 13x9 glass dish or individual oven-safe bowls with nonstick spray.
2Dice chicken breast and spread along bottom of prepared dish. Sprinkle minced garlic and pepper flakes over chicken.
3Pour sauce over top of chicken. (The sauce I make ahead and used Loaded Veggie Pasta Sauce- slow cooker)
4In a bowl combine cheeses; spread over sauce in dish. Dust with Mrs. Dash Italian seasoning. Spread crushed croutons on top.
5Bake for about 40-45 minutes until chicken is thoroughly cooked. If you'd like, serve with a salad and garlic bread.
